With summer fast approaching, I love making all of our summer favorites.
I remember when my wife and I were dating I was not a fan of chicken salad. I had grown up a die hard tuna salad fan just because my Mom never bought canned chicken like she did canned tuna.
The few times that I did have chicken salad when I was growing up I did not like the taste and texture and mixing of the ingredients. Odd, I know. But tuna was always the number 1 summertime sandwich in our house. Fast forward to when my wife and I were dating, she made me her Mom’s recipe for chicken salad.
It was delicious. I had finally grown out of the thought that fruit and chicken do not need to go together.
But they do and this chicken salad is one of my all-time favorite summertime lunches. Either serve as a sandwich, inside of a tomato or on top of lettuce with a side of Saltines. I hope you like this as much as I do.
Summer All The Time Chicken Salad
1 whole rotisserie chicken
1/2 cup of mayonnaise (I eyeball this because you can always add more but you can’t take ingredients out)
3 tablespoons of sweet relish
1/2 cup chopped and sliced green seedless grapes
3 tsp of lemon pepper seasoning
1/4 cup slivered almonds
Salt and pepper to taste
Mix all of the ingredients in a mixing bowl. Let sit in fridge overnight or 24 hours.
